Ireland
is a land of farmers and there is a long and proud production of
high quality meat in the Emerald Isle. Irish farms produce beef,
lamb and pork and much is made of the natural conditions under which
the animals are farmed.
Traditionally pork is the stable of Irish tables, and through the
ages Irish households kept a few pigs. Irish bacon is a cured, highly
salted and often served with cabbage for breakfast.
Another very typical Irish small good is Black Pudding, a sausage
made from pig's blood mixed with oats, salt, onions and spices.
Ireland
is also famous for its fine tender venison.
