According
to Irish folk stories whiskey was invented by St.Patrick however
more likely is that monks brought the recipe back from the Middle
East with them in the 6th century, which is roughly when the distillation
of Irish whiskey started.
Traditional Irish whiskies are made of a blend of malt and barley
grain, which is dried in closed kilns, unlike Scotch Whisky. The
"wort" is then triple distilled through both column and
pot stills and aged for a minimun of three years in oak casks. Irish
Whiskey is smoother than Scotch Whiskey and does not have the peaty
flavour of Scotch.
Irish whiskey can be served neat or on the rocks, but it is also
the main ingredient for popular cocktails and drink such as Irish
Coffee and Bailey's Whisky Cream.
